Spinach & Egg Breakfast Casserole•1 box/bag seasoned croutons•1 pound Bob Evans sausage roll-original - (they now sell cook, chopped turkey sausage that is perfect for this recipe)•4 eggs•2 1/4 cups milk•1 can cream of mushroom soup, condensed (I have subbed cream of cheddar cheese OR cream of potato)•10oz frozen spinach, thawed and squeezed dry•8oz bag shredded cheese (cheddar-jack)Spread croutons on the bottom of a greased 13x9 inch baking dish. Crumble sausage into small pieces in a skillet - cook and drain (or use pre-crumbled and skip this step!) Spread over croutons. Whisk eggs and milk together then add soup, cheeses, and spinach. Pour egg mixture over sausage and croutons. Cover and refrigerate overnight. Bake on 325 for 50-55 min or until set and lightly browned on top.
